Production
Grapes were hand harvested in late September, whole bunch pressed and fermented in stainless steel with 4-6 weeks of lees stirring. The wine was aged in temperature controlled stainless steel tanks on its lees for 6 months and is completely unoaked.

Tasting notes
Delicate, aromatic nose and nicely herbaceous with ripe fleshy fruit on the palate. It has a good linear structure with a gentle complexity and mineral freshness on the finish. The high proportion of Sémillon means that the wine will also benefit from some bottle ageing.
Food match
Whole sea bream, cooked on the barbecue and served with homemade mayonnaise and a tomato salad.

Meet the producer
Xavier and Caroline Perromat took over Château Calvimont in 2012, along with Château de Cérons. The couple purchased Xavier’s parents’ estate and actively began to put their own stamp on the vines and the wines.
Château Calvimont comes from specific plots which have always belonged to the Cérons estate; the Marquis de Calvimont was the owner in the late 18th century. Viticulture is sustainable and winemaking in the gravity fed cellar is precise, producing restrained yet characterful wines with a fine minerality and balance. The vineyards are on a plateau of gravel over limestone overlooking the river Garonne, perfect terroir for Sémillon, Cabernet Sauvignon and Merlot in particular.
