The first wines produced in Chile were made with País grapes during the 1550s and was Chile's primary wine grape until the introduction of Bordeaux varietals in the late 20th Century.
Production
100% País, from dry farmed vines which are estimated to be over 150 years old. Grapes are hand picked and destemmed and put in to open top wooden tanks where slow alcoholic fermentation takes place over 18 days with soft pump overs to avoid extraction. Malolactic fermentation takes place and the wine is aged in conctere eggs and old oak barrels for 18 months.

Tasting notes
Red fruit aromas such as cherries and wild herbs, with an earthy hint. The palate shows firm and gentle tannins, structured and balanced, an elegant and complex wine that is reminiscent of Chile´s native forest.

Works well with Mediterranean dishes, oily fish or chargrilled vergetebale dishes.

A new producer from Rio Itata, CoPa Wines is a tiny project solely focussing on old Itata's ancient vineyards, the oldest in Chile, from a clutch of small family growers brought together into the CoPa family of small ferments and tiny volumes.
