Avon is a wine farm on the rugged slopesof the Olifantsberg Mountain in the Breedekloof Valley. In 1977 Clairette Blanche bush vines were planted and almost forgotten, until the vineyard was salvaged more than four decades later. This wine is hand crafted with minimal interference allowing the fruit of these once untended, unirrigated old bush vines to express a unique provenance.
Production
This wine is made from late ripening Clairette Blanche grapes from 45 year old vines. Grapes are hand picked in the early morning and transported to the winery where they are whole bunch pressed and settled for 24 hours. Racked to 4th fill French oak barrels and further fermented. Thick lees contact for about 6 months with regular ‘bâtonnage’ then racked from thick lees with sulphur added and aged in the same barrels for a further 2-3 months.
