Classic un-oaked Chablis from the northern reaches of the region
Production
Cool fermentation in stainless steel at 15 - 18 degrees celsius. The vineyards of Maligny benefit from south-west exposure which brings considerable richness to the wines. The domaine has vineyards across all four appellations in the village; Petit Chablis, Chablis, Chablis 1er Cru Fourchaume and Chablis 1er Cru Homme Mort produce very different styles, from steely and racy to powerful and rich.

Tasting notes
With this vintage we see a return to the lean and flinty style that is a signature of the domaine. A clean chalky nose preceeds a beguiling fresh hit of white nectarine and minerality on the palate. The finish is clean, with pleasing steely acidity.
Food match
Trout stuffed with fresh herbs and grilled on the barbecue.

Meet the producer
In Maligny - as far north in Chablis as you can get - on the right bank of the river Serein, Domaine Daniel Séguinot is a small, 27 hectare estate founded in 1971. It is now run by Daniel's charming and very switched-on daughters, Emilie and Laurence. Since they took over the running of the business from their father they have been instrumental in the move to domaine-bottled wines, produced without oak in a very pure, linear style.
