Production
Cool south- and east-facing vineyards, 220m above sea level. The soil is decomposed granite and loam. The Chardonnay was harvested between the 4th February and 29th of March 2021. The Sauvignon Blanc between the 17th February and 22th of February 2021.
The sauvignon blanc was tank-fermented to retain its intense varietal character and blended with tank-fermented chardonnay that received extended lees contact, to create a full, fruity wine.

The Wild Cape Olive tree, Olea europaea Africana is not only drought, frost & heat resilient, but provides shade & evergreen shelter to many animal species, including Chameleons. The Wild Olive fruit attracts birds, keeping them out of the vineyards during harvest. Its chameleon-like character adapts to any drinking experience, from summer sipping to Alfresco dining. Showcasing the broad fruit spectrum found in the Winelands, initial forward Cape green fig flavours follow through to a layered palate of ruby grapefruit and winter melon glacé.
