Production

The Chardonnay was sourced from younger vines (1995) in our Koomooloo vineyard and was harvested in the cool of the night.

The grapes are harvested in the cool of night. Oxidative handling of juice and coarse settling at ambient temperatures. We use indigenous yeast for fermentation with 65% older French oak. The process of battonage builds mouthfell and complexity and we allow partial natural malolactic fermentation with maturation on lees.

    VINTAGE

In 2019 we experienced a dry winter . Spring was warm with little rain, which set us up for another compressed harvest. The focus in the vineyard was to ensure that the vines evaded the effects of heat stress, which lead to loose canopies to allow shading
