Production
The grapes are harvested early for high acidity and lower alcohol. Coarse settling at ambient temperatures overnight. Fermentation occurs on light solids with selected yeast at 14-16oC temperature to enhance its aromatic potential and maintain freshness. Fermentation is stopped to leave residual of 7g/l. Short maturation on fermentation solids.

Tasting notes
The Dreamer is light straw yellow in colour with hues of green. Fresh apricots and violets on the nose with lifts of lemon. The palate is bright and fresh with vivid acid and juicy fruit. The balance of fruit and acid give the wine depth and vibrancy.
