No yeast was added during the fermentation. There was no fining and no filtration whilst making this wine. The wine was aged for 22 months prior to bottling in all neutral French barrels and puncheons.

Tasting notes
Leading with bright, saturated aromas of olive, cranberry and raspberry. Secondary notes of peppercorns, cacao, and espresso are noted. Aromas are bright, full and delicious. On the palate, the wine is mid weight with light, delicate tannins. Flavours feel generous yet buoyed with a bright core, and they run the spectrum of raspberry, dark chocolate and loads of spice.

This is delicious now, though should provide plenty of enjoyment for some time.
