Along with Alto Adige, the Collio region on the Slovenian border leads the way for high quality, cool climate Italian Sauvignon.

Production

The Sauvignon Blanc grapes are cultivated in the hills of eastern Friuli Venezia Giulia between Capriva del Friuli and Cormons. After hand-harvesting the grapes are macerated for 12 hours in stainless steel below 10°C. After racking and clarification the must is fermented at controlled temperatures for at least 4 months, using selected yeasts.
